Why are knife skills so important?

Rae C.
Answer:

1) Presentation: consistency is pleasing to the eye. Uniform cuts = better plating presentation 2) Texture/Mouth-feel: foods can actually taste different depending on how they are cut and cooked. Cutting aids in creating the taste you are going for. 3) Professionalism: if you care about your craft, you will put in the effort to make it flawless. Knife skills are the basis of almost all cooking styles. Your knife is an extension of you.

Rae C.
Answer:

The Incans used a series of interlocking stone blocks to create structures that have stood the test of time. These blocks were generally composed of 3 different types of stone and appear to have been made from pounding the stones and not cutting them. The buildings were often slanted.
