The significance of water in the Great Gatsby is that it represents sin. Gatsby gained his great fortune through his mentor, a sea captain, who was killed at sea and then left all to Gatsby, to continue in his fashion. Gatsby then profited enormously in the selling of alcohol during Prohibition, which, though more of a stretch, could also be assumed under this umbrella. Further, water represented the gap between he and Daisy, because now as they are both corrupted souls, they will never achieve true togetherness, as also represented by the divide between their homes on East and West egg. Finally, Gatsby dies in his lavish pool, which is the final crescendo of water, or "sin" swallowing him in death.
