How can I write something that will stand out to a professor?
Rather than writing "for" the professor, as some advise, I would suggest studying your own material until you have such a solid understanding of it that the words flow onto page concisely. If you don't truly understand something, you'll use too many extra words to get across what one sentence could say. Often, our writing becomes confusing because we're not aware and knowledgeable of what we're even writing. It starts with you.

How is political science a science if it falls under the "Humanities" category?
True political science requires us to use scientific methodology to explain worldly phenomena, rather than simple opinion or conjecture. Political science is unique in that, rather than human biology that is relatively constant, political aspects of society are contingent on society and our norms, where the only constants are our continued change and evolution.

What's the big deal with passive and active voice if the sentence still says the same thing?
Active voice emphasizes the action of the verb. While there's a time and place for each voice, active voice allows us to see the subject-verb format in true form, and the simplicity of it makes the sentence or phrase more memorable.
