Why do my thoughts make sense in my head, but I can't seem to explain them well in writing?
Everyone struggles with this, even "good" writers! The fact is that writing is a form of communication where you have to anticipate your reader's understanding and potential questions to your ideas, unlike a conversation where they can just respond. Look at the ideas you've listed. If you were looking at the page fresh without your own prior understanding, would it still make sense? What kind of questions would a reader ask? Now start explaining some more; you can organize in the next step. ;)
Why is so much of classic literature either boring or dark and weird?
The boring stuff is probably historically relevant, meaning it was important to what was going on at the time, and if you don't know the context, you probably won't appreciate its relevance. The dark stuff is because... well life sucks sometimes, doesn't it? Literature, like any art, is an expression of humanity, which means it's going to be dark sometimes. However, my passion for literature is in the wholistic story of humanity, not just the dark stuff--think about it, what are the stories we are telling with our lives? What stories can literature provide that we can relate to?

What is the best way to learn a second language?
Input, and find a way to study that you enjoy. If you are not spending time in the language, you will not learn it. Of course, technical skills like grammar and vocabulary are a must, but the single most important factor of language learning is motivation. Find a way to make yourself curious about the language, whether it be TV, culture, music, or better yet, finding a native speaker friend!
