It makes a claim that is contestable -- you are not just saying "Ice cream is delicious!" into a vacuum. There has to be an argument you are making. This generally exists in tension with other arguments or assertions that have been made around that same subject. So a thesis statement would be, chocolate ice cream is better than vanilla ice cream, because that is contestable.

How do we grapple with the way that the subjectivity of researchers causes subjectivity in their research?

The researcher (if an anthropologist, referred to as an ethnographer) must state in the paper how their subjectivity exists in relation to their research -- for example, if I'm writing about the Black Lives Matter movement, I would have to address right away that my perspective is that of a college educated white queer person. That might specifically impact how I think about race and intersectionality in my research.
