Crenation is the shriveling of cells caused by differences in solute concentration between the internal (cellular) and external (extracellular) environments. When the solution surrounding the cell is hypertonic or there is a higher solute concentration outside of the cell, the water inside the cell will diffuse outside the cell. This is because of osmosis, which is the passage of water from a less concentrated environment to a more concentrated environment. As a result, when the water leaves the cell, it will shrivel. Think about it this way: water will always look for the more concentrated environment.
