Michael W.
Answer:

When we hold our breath, we increase the levels of CO2 in our bloodstream. This leads to an imbalance in the bicarbonate buffer system, forcing more bicarbonate to be produced, which, in turn, releases more protons into our bloodstream, leading to a decrease in our pH.
